Plums are stunning on their own however, this creamy, nutty and sweet combination showcases their true potential. The ricotta adds a nice hit of protein, the plums add wonderful antioxidants and fibre and the pistachios and maple syrup bring the two together.
Makes 1 Prep + Cook time 5 mins
1 wholemeal rye sliced bread
1 tbs ricotta cheese
1 plum, deseed, sliced*
1 tbs pistachios, shelled, roughly chopped
1 tbsp maple syrup (pure)
Toast bread in toaster; spread with ricotta cheese, top with sliced plum; chopped pistachios and drizzle with maple syrup. Enjoy!
