Serves 2 Prep/cook time 5 mins
2 x Golden Top Pita bread (wholemeal)
8 store bought falafel balls, warmed
2 handfuls spinach leaves
2-4 tbsp purple or plain sauerkraut
1 cucumber, ribboned
2-4 tbsp Fresh Fodder Tzatziki
- Place a handful of spinach in centre of each pita bread; top with sauerkraut (use your preferred amount, I like 2 tbsp on each); divide cucumber ribbons and falafel balls between both and generously drizzle each with Tzatziki. Roll and devour!
This works well toasted in a sandwich press for 1-2 minutes to slightly toast without making the cucumber soggy.
Swap the falafel balls for grilled lamb, chicken or beef.
